Chicken is a staple in our home and we probably eat it most nights that one of us cooks. Chicken can get really, really boring though. There are only so many times that you can put garlic, salt, and pepper on it and pan fry it. So, I recently made a version of chicken that involved pepperjack cheese and green chiles. I also marinated the chicken in a chili-lime marinade. It was SO good. So good that I have to share the recipe!
2-3 chicken breasts
1 can of green chiles
pepper jack cheese slices
seasonings to taste (I really liked Tony’s, garlic, and chile powder)
1. Juice the limes and put the juice in a bowl. Add your seasonings. I used maybe 1/2 tsp. of each of the above and add in 1 tbsp. of olive oil.
2. Take your chicken breasts (thawed if frozen) and brush the marinade on the chicken. Let it sit for at least an hour, overnight is best.
3. Place your chili-lime chicken in a casserole dish. Open the chiles and spread those on the chicken breasts. Top with the pepperjack cheese slices.
4. Bake at 350 for 30-40 minutes and enjoy!
I paired this with a quinoa salad with quinoa, black beans, corn, tomatoes, jalapenos, lime, cilantro, and pepper. It was a great meal and one that we’ll be making again soon.
